Given how expensive meat has become lately, I have turned into a pressure canning fool. Last week I bought nine turkey breasts on sale and canned them with gravy. A little girl, one year old, gave it two thumbs up. Now how much more honesty can one ask for in a review? Today, our wonderful grocer is having their annual meat sale. I wasted no time in picking up whole beef tips which I plan to cut up and make beef paprika. They weigh about 12 pounds a piece I think. Should keep me busy. Any other canners out there canning meat? Add your favorite recipes... beef, pork, poultry all for the pressure canner. Thanks!

I've never canned meat before, I hope someone hits you with some recipes. I'm interested in the process.

This sandwich is enjoying a renaissance, in slow-cooked versions. Here, soy sauce, rosemary, and thyme add depth of flavor to the broth that develops over 10 to 12 hours of cooking.

lechef, please stop back again. today is one of very few that I can't spend time posting. I'd love to trade canning ideas. I just got a pressure canner because my pressure cooker isn't large enough for canning. I've been water bath canning but plan to can meats and stews, soups & chili etc. Woud be great to share info.

My family always butchered their own meats and always canned the chuck meat. It made for a really quick supper when added to boiled potatoes, carrots and onions.
