I want to invite a couple over for the first time and would like the meal to be fabulous. His family owns a couple of Italian restaurants that are pretty impressive so I can't compete in that arena. I'd like an appy, main, and side dish that are upscale but not snooty, on the lighter side, and won't have me sweating in the kitchen all night. I don't ask for much, huh? I'm feeling a little intimidated which is new for me so I'm begging for help here! Puleeze help a sista out! Dinner won't be til next week so I can shop for any ingredients I might not have. :o)

Orzo with Parmesan and Basil

	Oct. 3, 2012 4:04 pm I know a casserole sounds pretty lame, but trust me, this is amazing. My husband called friends over one night to try it because he couldn't get over how good it was. There is a video by Chef John too.

Barbequed Ribs

i wouldn't make a big deal out of this. the folks just want to be treated as you would the next-door neighbors. other folks, probably, went to extremes to impress them. why try? grill some ribs and corn, make some tater salad. serve cheap beer. enjoy yourself. this isn't an audition. i can come up with a ton of great southern recipes. oh...chill a watermelon, that's dessert. relax...they want to also! grab some paper plates and cheap beer, or box wine and RELAX!!

Benny's Famous Jalapeno Poppers

	Oct. 3, 2012 4:26 pm I agree completely with gderr!! Relax and make it super casual. These poppers go in the oven easily and you don't have to "tend" the grill.
