Hi, try these. cheers. Spanish Chicken Pie Chicken 2tbsp Extra Virgin Olive Oil 180g/5oz Cooked Chicken - shredded 1 clove Garlic - crushed or finely chopped 1 Onions - finely sliced 1 x 400g/14oz tin Chopped Tomatoes 1tsp Paprika - Smoked if possible 85g/3oz Roasted Peppers - sliced 30g/1oz Black Olives - pitted and halved Salt and freshly ground Black Pepper For the Mash 500g/1 lb Potatoes - peeled and sliced Milk - as required 45g/1½ oz Butter 1tsp Paprika 1 Egg - lightly beaten Preheat oven to 200c/400f/Gas 6; Grease a large ovenproof dish; Make the topping, boil the potatoes in water until soft but still with some bite; Drain, dry out a little on hob, mash with the butter, egg, paprika and milk and season with salt and pepper; Meanwhile, heat the oil in a large pan on a low heat, stir in the garlic and onions and cook gently, stirring occasionally, for some 5 minutes or so until softened; Add the paprika and continue cooking, stirring continuously, to mix in well for a further 1 minute; Add the tomatoes, increase the heat and, stirring well to mix everything together, bring to the boil; Reduce the heat, add the chicken, peppers and olives, season with salt and pepper and, stirring continuously, mix everything together well; Continue to cook gently, stirring occasionally, for some 5 minutes or so to thicken the mixture slightly; Pour the mixture into the ovenproof dish, top with the mash and bake in oven for some 15 minutes or so until the sauce is bubbling and the top is golden brown.

Stovies Ingredients: Left over Roast Beef - diced or can use Chicken or Corned Beef - shredded 4 large Tatties (Potatoes) - partially boiled and sliced 1 Onion - thinly sliced 1 tbsp Dripping (from cooked beef) or Lard A wee touch of Beef Stock Salt and Pepper Add a wee bit of lard to a pot and gently cook the onions until soft; Add the beef or other and salt and pepper. Layer over with tattie slices and cover with the stock to taste (depending on how moist you prefer the meal); Suggestion - add a wee bit and top up as required. Simmer on the hob for about an hour or cook in the oven at 190c/380f/gas 5 for about 50 minutes.

This is a quick and easy curry stir-fry made with chicken, zucchini, red bell pepper and carrot. Coconut milk and curry paste make an irresistible sauce. No need to go out to eat, as this dish is ready in about 20 minutes!

Skip the cook the chicken part make the curry sauce and then add in the cooked chicken to heat thru.

This is the Paste Recipe I use- Put all ingrediants in a blender and blend!!!------------ •PASTE: •3 shallots OR 1 small cooking onion, diced •1 stalk lemongrass (see instructions below) OR 2 Tbsp. ready-bought lemongrass (available frozen at most Asian stores) •1-3 red chillies (depending on desired spiciness) or 1-3 teaspoons Thai red chilli sauce •3 cloves garlic •1 thumb-size piece galangal, peeled and sliced (may be substituted with ginger) •¼ tsp. white pepper (may be substituted with black pepper) •2 Tbsp. chilli powder •1 Tbsp. coriander seeds, ground with pestle & mortar (or a coffee-grinder) •3 Tbsp. regular (light) soy sauce or tamari •1 kaffir lime leaf •½ tsp. dark soy sauce •1 tsp. brown sugar •1/2 tsp. dried turmeric (or 1 thumb-sized piece of fresh turmeric, sliced) •OTHER:

Stuffed Tomatoes

Tomatoes hollowed out and stuffed with canned tomatoes with green chile peppers, bread crumbs, cheese and smoked sausage. Substitute the fresh flesh of the tomatoes for the canned tomatoes with chiles, if you like. Sausage is an optional ingredient.

Easy and elegant chicken dish. It's a great way to use leftover chicken or turkey. Green pepper and red pimientos make this a pretty dish to serve at Christmas or anytime. Serve over cooked rice, toast, or noodles. Can be made ahead and reheated.

We like this. You can scale it according to how much chicken you have left. I sub chicken broth for water and bouillon and add some celery.
