Challena is looking for: (3 recommendations)
I made the following cheese cake....when I undid the springform pan, the sides of the cake stuck to the pan thus pulling the cake apart causing a giant crack. What did I do wrong? The directions did not say to grease or flour the springform pan.

You should run the edge of a thin bladed knife around the inside the springform pan before releasing the clasp.

Challena, I ALWAYS butter sides of my springform pan and more importantly do a "water bath." It is basically wrapping the springform pan in foil and putting it into a larger pan of boiling water for the entire cook time...cheesecake will come out beautiful and no cracks. (i think there's a video on youtube "water bath for cheesecake")

Thanks everyone....I did do the water bath and had no cracks until I released it. NEXT time I will butter AND run a knife around the sides before releasing!

I made this for Christmas this year. Even if it is broken, it will still taste wonderful! I cooled it thoroughly, then put it in the frig overnight. Take it out, run a thin knife around the edge and then release the springform pan. It will have more rigidity when it is cold. I actually poured a ganache over the top in the morning and put it back for a few hours before releasing it. Hope that helps!

Parchment paper works great,line teh pan with it,undo pan,slowly peel bak paer,PRESTO !!
