Along with 3 other adults, we're taking 13 youth on a mission trip to a town about 4 hrs away. We'll be housed in a church with a full kitchen. The youth will be challenged, on a budget, to plan and shop for dinner for 17 people, plus sack lunches to take with us to a water park the next day. I'm looking for budget-friendly recipes to feed hungry kids, ages 6-9th grades, plus 4 adults. I thought about doing baked potatoes with whatever toppings, but I'm afraid that won't be enough food. I welcome your suggestions tonight! I'll chk msgs Monday afternoon for Monday's dinner. Thanks, everyone!

PS--we'll only be at the church for one night, so preferably, no leftovers. We're helping at a food pantry for several hours, then planning and shopping, preparing and cooking, and that's it; we have to be out by 9am Tuesday.

I would suggest a homemade "Hamburger Helper". I fry 1 pound of beef, add about 1/2 cup each of onion and celery, one can diced stewed tomatoes (they should dice stewed whole as a cheaper version), add 1 pkg. of gravy mix or taco mix and one cup of water. Simmer 15-20 minutes. Mix with cooked macaroni noodles. Serve with bread/buns. I would triple this for 17 people.

If can serve peanut butter. Try peanut butter and jam wraps for lunch sacks because they won't require refrigeration. Check the sales at the store for fruit and cookie type snacks.

Baked potatoes are filling and this is a great way to make it for them. I use cooked ground beef & vegetarian vegetable soup. But this recipe with the meat in the soup would be best for you and easier too maybe. They can still top it with cheese and/or sour cream, even chives are good.
