I asked this over the weekend, but I'll repost again...need all the suggestions I can get! DH & I went to diabetic ed classes last week, and he finally understands what will happen if he doesn't watch what he eats. Looking for your favorite diabetic friendly recipes or tips. No zucchini though...that did NOT go over well last week. Broccoli & cauliflower are probably out too. I'm back to work today, but I'll check back at lunch and tonight. Thanks gang!

I wanted to do something different as a vegetable side dish. It was Thanksgiving, so I got a bunch of root vegetables and roasted them. They were a hit and are now a staple at our holiday table. I cook them during the year sometimes, as well.

I have roasted broccoli and cauliflower. Maybe that would get him past the ewww stage on it? Broccoli cooks way faster, add it in part way through. Add in some rosemary or herbs of your choice.

A wonderful cold savory soup made with tomatoes, cucumber, green and red bell peppers, and seasonings won't heat up the kitchen on those hot summer days. Garnish with fresh parsley, chives, dollops of sour cream, and toast.

Here you go. The salt should be cut out to lower sodium. But you cannot beat 49 calories per cup and 1 gram of fat. And it tastes so fresh. I made two batches over the last three days, DH loves this and I hope you do to!

Be careful with the tomato juice sometimes that can have a lot of sugar in it.

I did not think of the sugar in the juice! I tossed the container so I don't know what amount is in it. I'll buy another this week to check!

Just found the detailed nutrition AR did, 7 g sugar 28% per serving.

You really have to read labels when cooking for a diabetic. I've been shocked at how much added sugar is in things. It's depressing.

I know...in class they were talking about yogurt, and how the added sugar in some of the fruits affects the carb count. I looked at EVERY type of yogurt Walmart had....my head was swimming by the end of that shopping trip!

It's very hard. We still struggle with how to balance his foods. Salsa is a free food for diabetics so we eat a lot of it. I make it homemade and I also make my own taco seasoning. We eat meals like this quite a bit. Or just chicken fajita type meals with a corn tortilla.

Do all of the research that you can. Tell him he's going to have to be more open to the food that he will eat. Cooking for a picky diabetic would be hard. Find books at the library.

We love this salsa chicken...its been on our "make again" list for quite a while. I also found one that is made on the stovetop....you add diet cola to the salsa, and reduce it down to a sauce. Probably kind of similar to the homemade Rotel BBQ sauce.

Cucumber Salsa- 6 or so cukes (peel, seed, chop) 1 red onion, chopped 2 cans Rotel (1 cilantro lime, 1 habanero) 2 packages dry ranch dressing mix 1/4 c vinegar 1/4 c sugar

I am the wife of a very healthy type II diabetic. He was diagnosed 12 years ago and so far so good with just diet and exercise. The one thing I have tried to do religiously is to add fiber to his diet. We use whole grain in everything we can.Brown rice, whole wheat pasta, sweet potatoes (just baked, the split and a touch of butter. I do bake for him occasionally and use white flour and splenda, but that is rare. I wish you and your husband the best in your quest for better eating. BTW I also subscribe to Diabetic Living for tips and some very good recipes.

Thanks mauigirl. So far, we've walked 1-2 miles or more every night. Since last Monday, his morning fasting numbers have been cut in half. Amazing what watching what you eat and a bit of exercise will accomplish!
