Hi all, hope you're doing well in this heat. I'm looking for a few dishes that can be frozen and reheated quickly as to not heat up the entire house. Our oven is broken(repair hopefully soon) so i can't do anything baked, just stovetop dishes.

I make this a lot more on the stovetop than I do the grill. My family could eat this once a week. I put all ingredients (minus oil and butter) in a big pot. Add about 2 inches of water, put on a lid and semi-boil until the potatoes are done, about 20 minutes.

You could fix up a big batch of rice and freeze it in ziplock bags. Fried rice is quick to pull together and the frozen rice works great.

When I cook rice I usually make a triple batch and put it in quart bags in the freezer.

These black bean and corn quesadillas are really cheesy, a little bit spicy, and a little bit sweet. My vegetarian husband goes crazy over these every time! Feel free to play around and add chicken or veggies, if you desire. Don't forget the salsa and sour cream!

I freeze have the black bean/corn mixture for another meal. This is one of my favorite stovetop meals.

Sheila - I have no recommendation for food - but saw your hometown and thought of this song. It's one of my favorites. http://www.metrolyrics.com/petaluma-afternoons-lyrics-susan-werner.html I love listening to it in the winter in Minnesota!

You could pan fry instead of bake. These are so good!
