I'm making an appetizer mini taco platter for a party of about 30 people tomorrow. I'd like to do some chicken using the Southwestern egg roll recipe on here. My question is should I use flour tortillas and bake them or use the wonton wrappers and fry them. They have to be transported in a car for about 20 min .

If you are making egg rolls, I personally would fry them in the wrappers. What is the recipe you are referring to? Fried egg rolls, once cooled, will travel alright if you put them in an airtight container.

Egg rolls once fried and cooled won't be crispy. They tend to get a little on the mushy side and don't hold up well reheated. I'd go with the baked or fried flour tortillas and reheat in oven.

I vote bake and reheat, the fried will get soggy

Huh. I've never had any trouble with them going soggy if you put them in a closed lid on papertowels. The towels will soak up any extra grease. Heck, I've thrown them in a ziploc bag and eaten them the next day and they were fine. Perhaps for the party you would be better off baking them. Worth a try!

I agree with MrsWolfie, mine do not get soggy either. You could bake them instead; but they don't get as crispy.

The crispy, in my experience, can only come from the fryer and I've even baked bacon before. It was good but it didn't have that crunch. If you figure out how to make both worlds happen, please let us know.
