Let's talk about MUFFINS....I absolutely adore this quick bread and am baking as much as I can for the freezer while berries are plentiful. How would you adjust the baking time and/or temp to bake in regular size cupcake tins? I've been freezing slices of the bread but I think muffins would be easier.

No need to change the temp. Baking time for muffins is usually around 18-22 minutes, so I'd check them at 18 minutes (toothpick test) and then every two minutes after that if they're not done yet.

Maybe even check at 16 minutes the first time, to be on the safe side.

I love blueberry muffins using orange zest instead of the lemon zest!

Buttermilk is the secret ingredient in this moist, nutty loaf. This bread freezes well.

This is my favorite banana bread recipe. I use four 3 1/4 x 5 1/2 inch mini loaf pans and bake them for 45 to 50 minutes. When I make them into muffins, I bake for 15 to 18 minutes. Yes, the baking temperature remains the same.

I've tried many different banana bread recipes, none that was any better than the others....I'll give this one a try. Thanks for your comment.

I do recommend the recipe, but I wanted to give you an example of it so you might get an idea of how long the different sized pans would take to bake. :) An example never hurts!
