Green chilies, cilantro and cumin make this cheese tortellini dish feisty and good. Use your own tomato sauce or a bottled marinara sauce, either way this wonderful and simple pasta is a snap. Don't forget the mozzarella!

Cheesy Italian Tortellini

A delicious marinara sauce is cooked all day in the slow cooker. When it's time for diner, just throw in some tortellini, and sprinkle with cheese. When the noodles are cooked, pass around the bread, and enjoy!

Spinach and Tortellini Salad

This salad is a snap to make and looks and tastes very Italian. Cheese tortellini are cooked al dente and tossed with spinach, Parmesan cheese, cherry tomatoes, sliced black olives, and a prepared Italian dressing. Great barbecue salad.

Always fresh or frozen, up here in "Italian Alley" between Hamilton and Toronto. Some excellent offerings are easily accessible and available, meat or cheese filled. You can do it with a marinara sauce (ie simple tomato and herb); you can do it with a Vodka cheese tomato sauce, you can do them in oil/garlic Italian bacon ("al olio?"?) dressing...and arguably serveral ways in between these, but the dreaded first step is finding a brand of Tortellini that your family likes, and nailing the cooking method down. Undercooked, or overcooked, they will draw some "fire" from your eaters. We have abandoned the typical "shaker" cheeses as a condiment, in favour of fresh grated. Our family fave is "Asiago" at the moment. If you note how "Angel Hair" and such delicate pasta's are meant to be served with really light, thin sauces, and it takes a much more "robust" noodle to stand up to meat (read "protein") in the sauce or as a side, well tortellini are relatively tough little nuggets, that minced "triple mix" (ie ground beef/pork/veal) will work out in the sauce or stuffing, as will roasted Italian Sausage as a "side" If using veggies in the sauce, I would be carefull to cut them very very finely, but that may be "just me"... Enjoy!

chairlifter, I have never purchased tortellini; can you reccommend a good brand? also, which is your favorite way to make? thanks for your advise.

HMM! Don't have any on hand at the moment, they are on the shopping list for tomorrow, as this thread has motivated me...but I buy them in the Fortino's store locally, its a local grocery giant, Italian family based and now owned by Loblaw's/President's Choice, if that's any help. Will get back on this tomorrow night, as we have a function to attend tomorrow afternoon, but I get them fresh, in a sealedplastic receptacle cube in the fresh pasta and cheese setion...

Broccoli keeps very good company in this wonderful salad. There's fresh cheese tortellini, bacon, raisins, sunflower seeds, broccoli florets, red onion, and a sweet and sour mayonnaise dressing tossed in for good measure.

Misty I buy fresh tortellini and freeze it. "Olivieri" is the brand-available at an PC/Loblaws
