PAMBAKE is looking for: (7 recommendations)
Good evening. I have tried so many chocolate chip cookie recipes and I'm looking for that particular cooikie. I would like it to be kind of thick, very chewy, super moist, light in color but not cake like. I tried "annies " from this site and "award winning" but I'm still looking. I foyu think you have what I am describing would you be so kind and pass it along? Thank you for taking the time to do so. Pamela

Have not read the variousrecies, but the method may give vast changes in results. Have you looked at cooking on parchment paper on your cookie sheets? This will avoid "burnt bottoms" on occaision, which in turn gets you away from too much crispiness. I wish I was a better baker...its all "chemistry" and hitting exactly the right recipe...my (deceased) Mom had it in spades...it skipped a generation with me, but DS (a Professional) knocks them out and laughs at me...

Yes I use parchment paper. I also put one cookie sheet on top og another so the bottoms stay light as well- thank you for answering me..have a great night!!

not sure about the science....never liked it, flunked everything science, but i love love love to bake. i think measuring is very important when it comes to baking. the above recipe is my "go to" recipe for choc. chip cookies. they're soft, light in colour and oh so chewy. i make smaller cookies than the recipe states. i use a teaspoon and bake for 8-10 mins. these are very good. good luck :)

Hi Pamela, these are our favorites. You can omit the coffee flavor. These are thick, chewy, moist.... http://allrecipes.com/personalrecipe/63047058/davids-espresso-chocolate-chip-cookies/detail.aspx

I created this recipe for my father on his birthday. It contains lots of different chocolates and nuts. Thanks Dad for sending me to cookie baking school at the San Francisco Culinary Academy! This one is just for you!

This recipe is my all time favorite. You have to follow the directions exactly - it has not failed me yet. http://allrecipes.com/personalrecipe/62770737/kellys-scrumptious-chocolate-chip-cookies/detail.aspx

Pambake, not all cookiesheets are created equal. The new ones are double bottomed, and even so I can get "black bottom" issues (even using PP on occaision, tho that does help) Doubling up the cookiesheets works best if youcarefully put water in the bottom one, that doesn't overflow when the loaded op one goes in, and the water expands as it heats... I know, I know, there is something wrong with my recipes, that they need more shortening or soda or need to "sit" longer... You might need to go through the PITA contest of doing multiple batches whiletaking notes of each, and varying the method to find out where you strike your own "gold"!
