The dishes do not have to be vegetarian. I just want the vegetable to stand out. Instead of meat and vegetable, I am looking for more like vegetable with meat. The squash and tomato recipe looks interesting.

Hi, Jan Can. Try this. Cheers. Sorry no link. Stuffed Peppers with Mushrooms and Ricotta Cheese Preparation time: less than 30 mins Cooking time: 10 to 30 mins Serves 2 4 large Yellow or Orange Peppers 50g fresh Oyster Mushrooms - washed, cleaned and chopped 50g fresh Chestnut Mushrooms - washed, cleaned and chopped 20g Dried Porcini Mushrooms - soaked, drained and chopped Extra Virgin Olive Oil Salt and freshly ground Black Pepper 250g Ricotta Cheese 2 tsp Wholegrain Mustard 4 tbsp Pecorino Romano Cheese Toothpicks and/or small skewers Pre-heat oven to 180C/356F/Gas 4; Place the peppers in a baking tray and roast them for approximately 20 minutes; Remove from tray and put in a large bowl, cover with cling film and allow to cool; this will loosen the skin, making them easier to peel. Once cooled, peel off the skin, discard the seeds and cut the pepper in half lengthways; Set aside; In a frying pan, fry the oyster and chestnut mushrooms in a little oil until soft; Season with salt and pepper and allow to cool; In a large bowl, mix the ricotta cheese, mustard and dried porcini mushrooms together well; Add the cooked mushrooms, season with salt and pepper and combine everything together well. Place two tablespoons of the mushroom mixture on each pepper half; gently roll up and hold in place with a toothpick; Repeat until all peppers and mixture are used up; Put the peppers on a baking tray, sprinkle with the pecorino cheese and grill for approximately five minutes. Serve them immediately with a mixed salad, dressed with extra virgin olive oil and lemon juice and/or white wine vinegar.

Don-about how much is 250g of ricotta cheese? Is it like a half cup?

Here are a few recipes that I have. I love veggies and if it wasn't for my family I would just make veggies as the main dishes all the time! :)
