Morning everyone! I was looking at the cilantro tab allrecipes created and now I want something with it tonight. What are your favorite dishes that use cilantro? Was thinking something hearty like a soup or casserole. Any ideas welcome! TIA

Seasoned strips of chicken breast are cooked with bell peppers, onions, cilantro, and bacon and topped with tomatoes and cheese. Serve on warm flour or corn tortillas with guacamole and Spanish rice.

Good Morning, SB! I tried this out awhile back, and the family liked it. If you are new to cilantro, the fresh is best, IMHO.

Chicken, beans, corn, and rice are cooked together in a tomato-based sauce flavored with cilantro. Simple to make because you use only 1 skillet!

Love this recipe! It doesn't call for cilantro, but I added some fine chopped to the balls and a good chopped handful to the sauce, yummy!

Hi, try these. cheers. Chicken Thighs (Deboned) Curry/ Lamb Curry 3tbsp Vegetable Oil 500g Chicken Thighs - cut into 3cm cubes 1 large Red Onion - finely sliced 2 cloves Garlic - finely chopped 2 Green/Red Chillies - finely chopped - you can remove some seeds to reduce heat. Can always add more back later if the taste is too mild 1 or 2 tbsp fresh Ginger - to taste - grated 2tsp ground Paprika 2½tsp ground Coriander 2tsp Garam Masala ¾tsp ground Cumin ½tsp Salt ¼tsp Chilli Powder 4tsp Lemon Juice 2 x 400gr tins whole or chopped Plum Tomatoes 2 x 125gr cartons natural Greek or Greek Style Yoghurt 1 Green Pepper - chopped Bunch fresh Coriander - chopped Salt and freshly ground Black Pepper To Serve Basmati Rice and/or Naan Bread, Chapatis & Popadums Mix the Paprika, coriander, garam masala, cumin, chilli powder and salt together in a small dish to form a flavour enhancing spice mixture; In a large bowl, blend the tomatoes, yogurt, lemon juice and little salt together in a dish to form a rich mixture; Heat one tablespoon of oil in a large frying pan and add the chicken; Cook over a high heat for 3-4 minutes, or until the chicken is sealed all over; remove and set aside; Reduce the heat and add the remaining oil; Add the onions, garlic and ginger and fry gently, stirring occasionally, for 3 to 4 minutes, until golden and softened; Add the spice mixture and chillies and fry, stirring continuously, for 1 to 2 minutes to release the fragrance and aroma of the herbs; Add the tomato mixture and increase the heat to bring to a boil; Reduce to a Simmer and simmer for 10 minutes until sauce has reduced slightly; Add the chicken and stir well; Heat the mixture until simmering, then cook on a low heat for some 45 minutes to an hour, or until the chicken is tender and cooked through; If the sauce becomes too thick simply add more yoghurt; Add the green pepper and most of the coriander (reserve some for garnish) and cook for 10/15 minutes more; Season to taste, garnish with coriander and serve.

Asian Style Spicy Hamburgers These are best with Lamb Mince but can use any. 450g/1lb Minced Lamb/Minced Beef or Mixta (Roughly 60% beef/30% Pork) 1tbsp Extra Virgin Olive Oil ½ Lemon - Juice only 4 cloves Garlic - very finely chopped 4 Green Chillies - deseeded and finely chopped - some seeds may be added back re taste of heat required 3tsp fresh Ginger - grated 30g/1oz fresh Coriander (Cilantro) - chopped ½tsp ground Coriander 1tsp ground Cumin ½tsp Black Peppercorns - crushed ½tsp Turmeric ¾tsp Garam Masala ½tsp Salt Optional - 2tbsp Butter - for cooking only Method Pour 2tsp lemon juice over the mince, combine well together and set aside in fridge for some 30 minutes; In a separate bowl, mix together all the other ingredients including the rest of the lemon juice into a paste; Fold the paste into the mince/lemon mixture and combine thoroughly; Form into hamburger shapes to size desired; Cooking 1. Brush with a little oil and Grill or Barbeque on a medium heat until meat is cooked through but not dry; 2. You can make a Bombay Sandwich and the chutney uses cilantro and mint soo good. http://indianfood.about.com/od/vegetariansnacks/r/mintchutsand.htm

For me I boil the potatoes and then put a little butter/oil in the pan and then saute some onions and add in the mashed potatoes some cumin and red chilli peppers and salt.

Carrot and Coriander Soup Ingredients 1 tbsp Vegetable or Sunflower Oil 1 Onion - sliced 450g/1lb Carrots - sliced 1 ½ tsp Ground Coriander 1ltr/2 pt Vegetable or Chicken Stock (Can cheat and use cubes) Large bunch Fresh Coriander - torn and chopped Salt and freshly ground Black pepper Preparation method Heat the oil in a large pan and add onions and carrots and cook gently for 5 minutes or so to soften a bit; Stir in the ground coriander, season well and cook for 1 minute; Add the stock, bring to the boil and simmer for 20 minutes or so or until the vegetables are tender After 10 minutes or so add half of the fresh coriander to the broth, keeping half for a decent garnish; When ready, remove from the heat,” blitz “ with a blender; Serve with rest of coriander as a garnish.

I love chowder, but I suck at making it :( Its something with the flour...I just cant get it right. This recipe sounds amazing!

Well you can put cilantro in just about anything. I did make this soup recently, you could use chicken, was very good.

I use wonton wraps and bake them.. I know this is not a soup or casserole just wanted to give you another option

There's a link to the cilantro oil he uses on the shrimp which is good on chicken and steak too. I haven't tried it yet but I'd bet it would be good drizzled on some soups - tortilla soup comes to mind.
