I'm making pasta salad. They are usually kitchen sink type, and I remembered I have a bag of tortellini(beef, ricotta, romano)in the freezer I need to use. Any idea for dressing with this? I don't plan to use any other pasta if I put the tortellinis in there. Thanks!!

I would probably use an oil/vinegar dressing. Since you are using the tortellini, you want to keep it light. Maybe toss in some tomatos, basil and of course... the "kitchen sink" :)

It looks like all of the recipes on here for tortellini salad use the typical Italian dressing or caesar dressings. There's this combo.

Hi sassy, try these. different. Lime Vinaigrette A delightful mix of sweet and tart Ingredients 60ml/2fl oz Lime Juice 60ml/2fl oz fresh Orange Juice 1 ½ tsp Honey 60g/2oz Lime Zest 28g/1oz Sugar Salt and White Pepper 300ml/10fl oz Extra Virgin Olive Oil Combine lime juice, orange juice, honey, orange zest, and sugar in a large bowl; Add the oil, drizzling in slowly and whisking continuously to avoid separation; Season with salt and pepper to taste; Serve with salads/mixed greens etc.

Hi, feeling adventurous. cheers. Simply Divine Italian Dressing 1 ½ tsp Garlic - finely minced 1 ½ tsp English Mustard ½ tsp fresh Oregano (or ¾ tsp dried) ½ tsp Red Pepper Flakes or Dried Chillies - crushed 2 tbsp Sugar 60ml/2fl oz Water 2 tbsp Red Wine Vinegar 60ml/2fl oz White Vinegar 180ml/6fl oz Canola Oil 125ml/4fl oz Extra Virgin Olive Oil 120g/4oz Parmesan Cheese - grated Salt - to taste ½ tsp (or to taste) freshly ground Black Pepper Blend mustard, sugar, water, garlic, the vinegars and salt in blender/food processor; Mix until smooth; Slowly drizzle in the oils, continue to blend; Add remaining ingredients and blend until well mixed. Note: Can refrigerate any unused dressing for up to 1 week

Simple and magic. cheers. Caper and Garlic Dressing 3 tbsp Extra Virgin Olive Oil 1 tbsp Balsamic Vinegar 2 cloves Garlic - chopped 60g/2oz Capers - chopped Place all the dressing ingredients into a bowl and whisk well to combine

Thanks Don, I don't have enough of the ingredients except for the second recipe. What is English Mustard? Would dijon work?

Hi, english is a bit stronger and tarter but dijon has always worked for me. Coleman's is normally brand name. cheers.

Tortellini Salad with Grilled Tomato Vinaigrette

The vinaigrette is absolutely smashing. You'll want to just eat it with a spoon, but save some for the salad. Blackened tomatoes are blended with good things like balsamic vinegar, honey, mustard, tomato paste, garlic, and red wine vinegar, and then splashed on the waiting salad. Serves six.

I don't have any tomatoes except a few grape tomatoes. I put bell peppers, cukes, grape tomatoes, celery, carrots, scallions, and red onion in the mix. I might be able to do it without the tomatoes, just a balsamic type dressing. Thanks Lisa.

Broccoli keeps very good company in this wonderful salad. There's fresh cheese tortellini, bacon, raisins, sunflower seeds, broccoli florets, red onion, and a sweet and sour mayonnaise dressing tossed in for good measure.

This salad with the mushrooms and the red wine dressing would be great with beef tortellini.

This salad is a snap to make and looks and tastes very Italian. Cheese tortellini are cooked al dente and tossed with spinach, Parmesan cheese, cherry tomatoes, sliced black olives, and a prepared Italian dressing. Great barbecue salad.
