I'm back on the buzz after a LONG hiatus ... and boyyy have I missed y'all. I've left my job to re-enter the studying arena and I have simply no time for anything apart from my school work. :( I haven't done any constructive cooking either in the last 2 months and have largely been ... eating out (the plus side being that it's been largely salads). :( As you've probably guessed I'm on a budget, and don't have the time to put together laborious meals. Would you please throw me with your favourite sandwiches and salads that are the quickest to put together? I will check back later, so thanks a million in advance! :)

Hi ~ I Noticed you had been missing. I know you said sandwiches or salads, but I thought if you made a batch of this it would last several days. Its so good and very cheap to make!

I didn't think I would like this but it is delicious. I enjoy it best cold so either make ahead or put the can of chickpeas in the fridge the day before. :)

Nice to see you here, r2! I like this salad-I usually add some quartered strawberries. To save time, use a poppyseed dresssing or I like a raspberry vinagrette with it.

Haha! No worries at all Elle. I'm just glad I stopped by ... I've had a crazy phase ever since new year and it's gonna be this way till the end of the year! Thank you for all the recipes and tips! :)

Since you're open to soup suggestions also, this one is easy to make. I make a version without the chicken or taco seasoning. It makes six 2-cup servings and freezes well. It would make more with the chicken.
