Roxy's Oatmeal Surprise (aka Dessert for Breakfast)

"This is my default winter breakfast. It is a finely tuned recipe honed over at least 10 years after I realized instant oatmeal packets have something like 13 teaspoons of sugar or something absurd like that. It's so unnecessary with a little dried fruit and spices. It smells so good you'll feel like you're treating yourself to pie for breakfast, but it's actually pretty good for you."

Original Recipe Yield 1 bowl
 

Ingredients

  • 1/4 cup oats
  • 2 tbsp raisins (or just a "nice sized handful")
  • 1 tbsp chopped walnuts or slivered almonds (or a "small handful, only what fits in my palm")
  • 1/2 tsp (4-5 shakes of cinnamon)
  • 1-2 drops vanilla
  • 1/2 cup water (more if you like soupy, less if you like thick or "Borger Style")
  • 1/2 cup unsweetened vanilla soy milk (or milk of your choosing)

Directions

  1. Put all ingredients in a deep, microwave safe bowl. You want it deep to ensure no spillage. My hippy, vegan books say you shouldn't use a microwave, but it really does get the oatmeal the perfect, thick consistency where the raisins plump up. I never did like it on the stove.
  2. If you measure the water, I'd say 1/2 cup, but I often just cover the dry ingredients. Microwave for 1 minute, 30 seconds or so. I like to let the water cook completely out of it so it's really thick.
  3. Add milk to your liking. The vanilla soy milk is really the best. It adds a little more dessert flavor. I bet almond milk would be good though.

Footnotes

  • I have tried other dried fruits and have to admit raisins are my favorite. They turn into plump morsels of sweet heaven. When I travel I add soy protein powder instead of soy milk which adds protein and keeps me full longer. When I'm home I often have a side of lowfat cottage cheese along with it, again to ensure I've got enough protein to keep me full.
