Wow, these are FANTASTIC! I took the advice of apple.strudel and made them in a mini muffin pan. I put 1 Tbsp. dough in each mini muffin cup, baked for 10 min., then pressed the back of a rounded measuring teaspoon into each cookie to make a cup (like the ‘fudge puddles’ recipe on this site). I then filled each cup with the chocolate chips, marshmallows and then sprinkled with graham cracker crumbs. I then baked them for another 4 to 5 minutes, just until marshmallows started to brown. I used milk chocolate chips instead of semi-sweet chunks because I find the milk chocolate makes them taste more like a traditional S’mores. Be sure to grease the muffin tin too, otherwise they will stick. And let the cookies cool before removing from pan. Incidentally, I found that the same method works great in a regular-sized muffin pan too. They came out more like a typical cookie, without spreading out too much. Thanks for sharing this recipe – I will be making these again and again!
