Saveur, we loved your green bean recipe! I have made it 3 times now, including for Thanksgiving dinner and the family wants to repeat these green beans for Christmas. The first time I used turkey bacon and it was good for a lower fat alternative, the second time I made as written with pepper bacon and cooked the bacon with the onions. However, the pepper was overpowering and the onions cooked faster than the bacon. So, I think I got it right (for us) the third time on Thanksgiving. I used center cut bacon and sautéed the bacon first until almost done and then added onions, garlic, a little pepper (some family members can't take a lot of pepper) and the full 1/3 cup balsamic vinegar. It caramelized beautifully and had a great flavor. This will definitely be on future holiday menus. It is WAY better than the green bean casserole.
