  1. Brown beef in large skillet or dutch oven, drain excess grease. Return to skillet.
  2. Add Rice-a-Roni (save seasoning packets)and butter and brown the ground beef/rice/vermicelli mixture over medium-high heat until the vermicelli is golden brown.
  3. Add the Rotel tomatoes, stir in water, seasoning packets, and corn. Stir until mixture is dissolved.
  4. Cover and simmer over low-medium to medium heat for about 40 minutes, until most liquid is absorbed and rice is not crunchy.
  5. Place the mixture in 2 qt. casserole, sprinkle shredded cheese over the top, and bake at 350 for about 20-25 minutes.
