No Cream Lemon/Lime Ice Cream

"No cream, whole egg, lemon or lime (or both!)ice cream. A fast and easy cooked ice cream mix."

  1. In a blender combine condensed milk, lemon/lime juice and enough water to make 3 full cups liquid. Add eggs, salt and lecithin and blend until mixture is frothy
  2. Pour mixture into a heavy saucepan and heat over medium heat. Stir constantly and bring to a simmer and let thicken - about 5 minutes.
  3. Pour mixture into a bowl, stir in vanilla and refrigerate until cold, stirring occasionally.
  4. When mixture is cold stir in lemon/lime zest, pour into an ice cream maker and freeze according to manufacturer's directions.
