  1. Preheat oven to 425 degrees.
  2. Wash and dry the chicken well with a paper towel. Combine all the ingredients together and, using your hands, arrange in a single layer in a very large (or 2) roasting pan. The veges should not touch the chicken or it will steam instead of roast.
  3. Bake for 35-40 minutes.
