Extra Cheesy Cauliflower Skillet Dip

  1. - Break cauliflower into florets, discarding of stems. Steam covered over pot of shallow boiling water for ~12 minutes until tender, then remove from heat and allow to cool.
  2. - When cauliflower is room temperature, pour into food processor. Pulse until pureed, then salt and pepper to taste. Next add in parmigiano, garlic, and rosemary, again pulsing well before transferring to oven-safe skillet.
  3. - Evenly pour cauliflower mixture into skillet, then cover with mozzarella. Lightly salt & pepper sliced tomato, then drizzle with EVOO before topping over dip. Bake at 375F for 20 minutes until bubbly, then broil for 3-4 minutes more until browned. Immediately plate & serve, garnishing with fresh rosemary if desired.
