  1. Heat coconut oil on stove over low-medium heat.
  2. Add powdered spices and fry for about 30 seconds, until fragrant
  3. Add celery and stir fry for 3-5 minutes.
  4. Add frozen corn, tomato, oregano, and cilantro. Stir to coat.
  5. Add beans, stir to coat.
  6. Add salsa, stir.
  7. Simmer for 10-15 minutes, adding water as needed to keep the mixture saucy.
  8. Remove from heat and stir in rice until coated. Add salt to taste, and cheese if desired. Serve with hot sauce, tortilla chips, avocado, or any of your other favorite condiments.
