  1. Preheat oven to 350 degrees F (175 degrees C). Grease pans or use muffin cups.
  2. In a large bowl, combine sugar, oil, bananas, eggs, sour cream, and applesauce. Beat until smooth.
  3. Blend flour, flax meal, brewer's yeast, cinnamon, baking soda, salt and ginger. Fold in oats and walnuts.
  4. Fill tins 3/4 full.
  5. Bake - Loaf: 1 hour, Mini Muffins: 15 minutes, Muffins: 20 minutes, Large Muffins: 25 minutes
