  1. Beat eggs, oil & sugars
  2. Beat in vanilla & applesauce
  3. Mix in flour, soda, baking powder, salt, nutmeg & cinnamon
  4. Stir in carrots.
  5. Fold in pecans.
  6. Pour in 9x13 or 2-9"
  7. Bake 40-50 or 35 for 2 pans
  8. Cool 10 min, turn out on rack
  9. Mix frosting
  10. Frost cooled cake
