"I got this recipe from a cooking class I took at a local Greek restuarant. Using Greek yogurt and removing excess moisture from the cucumber makes this sauce extra thick and creamy. Delicious!"

  1. Peel some of the rind off the cucumber lengthwise and grate.
  2. Place in a sieve over a large bowl and allow to stand at least 1 hour, to remove excess moisture.
  3. Squeeze in a cloth and place in a bowl.
  4. Add yogurt, garlic, olive oil, salt and pepper and stir to blend.
  5. Cover and let stand in fridge for at least 2 hours, to allow flavors to blend.
