In another mixing bowl, with a wire whip or fork blend the eggs together, add in the milk, buttermilk/kefir, honey, and melted butter.
Incorporate the two bowls by adding the dry to the wet ingredients and mix well together until a nice consistency is achieved (say a thick smoothie).
Let that sit either overnight in the fridge or just while you warm your griddle. The longer it sits the more complex the culture in the buttermilk/kefir flavors the final product. Once the griddle heat (med/hi or 350*) is achieved you can begin frying the pancakes using either butter or coconut oil on the griddle top. Look for a good amount of bubbles on the top and a slight drying around the edges before turning. They should be a beautiful golden brown after the initial turn. Serve warm with your favorite home made syrup (blueberry or strawberry) or unpasteurized grade B maple syrup and lots of healthy butter!
