  1. Preheat oven to 450
  2. Wash and cube potatoes with skin on
  3. Toss potatoes with 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder and 1 tbsp olive oil
  4. In a separate bowl toss mushrooms, onion, red pepper, 2 tbsp olive oil and thyme together in LARGE skillet or 9x13 baking dish
  5. Rub chicken with butter
  6. Place chicken on top of mushrooms, onion, etc.
  7. Sprinkle with salt and pepper
  8. Add potatoes on top of other veggies and around chicken.
  9. Roast at 450 for 45 minutes
