My Homemade Chicken Noodle Soup

"I created this recipe one day while trying to come up with a way to use up leftover roasted chicken. It was so simple and delicious I may roast another chicken just to make this again. I made the broth with the chicken liver, gizzards, heart...that came out of the chicken cavity."

  1. Pour broth into saucepan. Add carrots, celery, bay leaf, celery leaves. Bring to gentle simmer and cook 20 minutes or until carrots and celery tender. Salt to taste. Add chicken and noodles. Continue to simmer x 10 minutes or until noodles tender. Remove celery and bay leaf. Serve topped with fresh parsley if desired.
