  1. Heat olive oil in a large pot over medium heat.
  2. Add carrots and saute for about 5 minutes.
  3. Add onion and cook for another 2 minutes.
  4. Stir in dry seasonings and toast for about a minute.
  5. Add the cabbage and garlic and cook, stirring occasionally, for about 10 minutes.
  6. Add potatoes and water, and stir through.
  7. Reduce the heat to medium-low and cover the pan. Cook for about 30 minutes (depending on the size of the potato pieces). Stir about every 10 minutes.
