Bacon-Cheddar Cauliflower Chowder

  1. Cook bacon in a large pot over medium heat. When crispy, transfer to a paper towel lined plate with a slotted spoon, leaving bacon grease in pot.
  2. Add finely chopped celery & minced garlic and cook 3-4 minutes until celery is tender.
  3. Add cauliflower, onion powder & water. Place a lid on the pot to steam cauliflower. Heat for 5 minutes or so, stirring every so often.
  4. Add 1.75 cups of chicken broth (saving remaining 1/4 cup for next step) and 2 cups of milk.
  5. Add a few dashes of your favorite hot sauce for flavor.
  6. Bring to boil.
  7. Meanwhile, in a separate bowl, whisk flour into remaining 1/4 chicken broth. Drizzle into chowder.
  8. *OPTIONAL STEP* Add chowder to blender and blend on low for a few seconds until smooth.
  9. Add 2 cups of cheddar & half of prepared bacon and stir until smooth. Add salt, pepper & hot sauce to taste.
  10. Ladle into bowls & top with remaining bacon. You can also garnish with green onion or parsley, extra cheese, or serve as is.
