Beat eggs in large bowl. Add half the can of beef broth and set the rest aside. Add envelope of soup mix and bread crumbs, mix well.
Add ground beef and use hands to mix well. Form into one large loaf or 2 smaller ones.
Place meat into glass baking dish and dump the rest of the beef broth over it. Cover and bake about 1 hour or until meat thermometer reads 160.
To make gravy: When meatloaf reaches 160 internally, remove broth from dish and place in small saucepan. Skim off as much fat as possible.
Heat broth over med-high heat until it begins to boil. While heating, mix cornstarch and water in measuring cup or bowl.
When broth begins to boil, turn heat down to medium and add water mix, stirring well. Continue stirring until mixture boils again and begins to thicken-let it go about 1 more minute, then remove from heat. Serve!
