  1. Fill a large saucepan with water and bring this to a boil.
  2. While this is coming to a boil, prep and cut your vegetables. Once the water is boiling add the Ramen Noodles (without the seasonings) to the water.
  3. Oil the skillet & add the onions and garlic and sweat them, then add broccoli and cook until bright green and starting to become tender.
  4. Add the additional vegetables and continue to cook until they start to soften but are still crisp.
  5. Once the veggies are cooked, remove them from the heat, pour them into a bowl and set aside.
  6. Remove the noodles from the heat and strain them.
  7. Rinse the noodles immediately under cool water to stop them from cooking and separate the strands.
  8. Spray the skillet again and scramble the eggs until they are moist but cooked.
  9. Add the vegetables and stir them together.
  10. Add the noodles and the Ramen Noodles seasonings and stir fry them all together (turning the noodles over and over to incorporate the seasonings into the stir fry.
  11. Once all the ingredients are thoroughly mixed together and heated through turn them out onto a serving platter.
