Easy Enchiladas (Beef or Chicken)

  1. If using chicken, boil chicken in water, then shred with a fork. Add onion and garlic.
  2. If using ground beef, brown the meat along with onion and garlic, then drain.
  3. Add next 7 ingredients (Worcestershire sauce through black pepper).
  4. In another skillet, heat oil.
  5. Add tortillas, one at a time, for 8-10 seconds on each side. Drain on on paper towel.
  6. In a 10x13 baking pan or cookie sheet with sides, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
  7. Pour some enchilada sauce in a large, shallow bowl. Dip a tortilla in sauce, fill with a spoonful of meat mixture, roll it up, and place seam side down in pan.
  8. Continue with remaining tortillas.
  9. Pour remaining enchilada sauce over tortillas and top with cheese.
  10. Bake in 350 degree oven for 20 minutes.
