MARINADE: Whisk together marinade ingredients and marinade chicken for two hours or more (overnight recommended).
PREPARE BREADING STATION: Preheat oven to 400. Finely ground cereal in a food processor. Pour into a bowl and mix in remaining breading ingredients. In another bowl, mix together mustard mayo ingredients.
BAKE: Place baking rack on a baking sheet and lightly coat with cooking spray. Remove excess marinade with paper towels. Brush each chicken piece with mayo mixture then press into breading until completely covered. Place on baking rack and lightly coat with cooking spray. Bake chicken until cooked through (about 35 minutes), flipping and spraying with cooking spray halfway through.
