  1. Preheat oven to 350 degrees. Grease and flour a 9x13 pan or two 8" rounds.
  2. Prepare apples. To prevent browning, set in a bowl of ice water and lemon juice.
  3. In a medium bowl, mix together eggs, oil/applesauce, vanilla, and sugars until well combined.
  4. Add in the flour, salt, baking soda, cinnamon, and nutmeg.
  5. Drain the apples and add them to the batter. It will be thick.
  6. Spread into the prepared pan(s) and bake 45-60 minutes. When a fork inserted in the middle of the cake comes out clean, it is done.
