  1. Preheat oven to 350
  2. Julienne the red and yellow onions. Mince garlic
  3. Drain and rinse artichokes. combine artichokes with 2T olive oil, garlic and spices in bowl. Spread out mixture onto a sheet pan and bake for 35 minutes.
  4. On medium heat, heat 2T olive oil in saute pan. Add the red and yellow onion and saute 6 minutes. When onion starts to brown, reduce heat and cook for 15-20 min, stir as needed. Once onions are carmelized, stir in lemon juice and cook until liquid is evaporated. Do not burn onions
  5. Combine roasted artichokes and carmelized onions. Serve hot or chilled
