Delicious Elk Meatloaf / Meatroll

"This delectable dish is a favorite of all those who have tried it. Elk is an incredibly flavorful meat, and is very lean with no gamey taste to it. You can usually find it pre-packaged and frozen at the butcher shop. (That's where I get mine). This entree is versatile and serves well with anything from Mashed Potatoes and Gravy with Corn; to Crisp sauteed Asparagus and Cous Cous."

  1. 1. Preheat oven to 350 degrees F. (175 degrees C.)
  2. 2. In a small frying pan, over medium heat, toast your cumin until golden brown. Take your 2 lbs of ground elk and need into it the toasted cumin, finely chopped sweet white onion, 2 minced garlic cloves, sweet basil, salt, and ground peppercorns.
  3. 3. Once needed thoroughly, lay it on a sheet of wax paper and cover it with another sheet of wax paper. flatten out meet to about a 1/2 thickness. (I use a pastry roller and roll right over the wax paper for this step).
  4. 4. Sprinkle the flattened meat mixture with real bacon bits, cover with slices of swiss cheese, (and sprinkle the cheese with the minced poblano pepper if you choose). Roll the meat into a loaf and set in a loaf pan.
  5. 5. Bake at 350 degrees F. for 1 hour or until internal temperature is at 160 degrees F.
