  1. Plug in waffle iron. Mix dry ingredients in bowl. Put 3/4 cup milk plus lemon juice in measure cup, add 2 eggs, beat with fork. Melt coconut oil in small measuring cup set in pan of simmering water on stove. Blend milk mixture into dry ingredients, add vanilla and oil, mix. Batter may be slightly lumpy. Stir in chocolate chips or other add-ins. Scoop 1/3 measure cup and put in middle of waffle iron, spreading a little if necessary. Remove when light turns green. Serve with butter and syrup.
