"My honey kept asking for candied yams with the OJ and marshmallows. I couldn't find a recipe, so I made one up. I must say it came out mighty fine!"

  1. 1. Preheat oven to 400
  2. 2. Roast whole sweet potatoes until slightly underdone. (approximately 35-40 Minutes)
  3. 3. Preheat Oven to 350.
  4. 4. Cool and peel sweet potatoes. Cut into bite sized chunks.
  5. 5. In large pot, melt 2 TBS butter. Stir in brown sugar, Orange Juice, and nutmeg. Bring to a boil, then simmer while stirring until reduced and thickened. (10-15 min).
  6. 6. Place potatoes in layer on 13x9 baking dish. Pour syrup over potatoes. Bake 35 minutes, spooning syrup over the potatoes twice during this time. Potatoes are done when fork tender.
  7. 7. Remove from oven. Arrange the marshmallows evenly on top. Place back in oven turning it up to 400 degrees. Cool until Marshmellows puff up and turn brown, approximately 10 minutes.
