  1. Heat Oven to 350°
  2. Cook Lentils according to package and set aside.
  3. In Medium pan heat 1 tsp olive oil and saute mushrooms for 5-10 min until softened and liquid starts to cook out. Remove from heat and place in baking dish cap side down.
  4. In Small pan heat 2 tsp olive oil, add onion and garlic and saute for 5 min.
  5. In small bowl, combine feta, parmesan, 1/4 C cheddar cheese, lentils, onion & garlic, and spices. Stir until well mixed.
  6. Fill Mushroom caps with the mixture and top with remaining cheddar cheese.
  7. Bake for 15-20 minutes and serve.
