"It's not only vegetarian, but also Vegan! I've been playing around with Different types of Vegetarian Chilis for a while, and this is the best one I've made so far. The lentils and quinoa help to provide the right texture for the chili without having to use one of those vegetarian meat substitutes. It's packed with protein and nutrients while low in fat. Enjoy!"

Original recipe yields 10 servings

  1. Cook Quinoa according to package and set aside. (Chop veggies while this cooks)
  2. Rinse Lentils and set aside.
  3. Heat Oil over med-high heat in large saucepan. Cook onion and garlic for 5 min. Stir in rest of veggies and cook for 10 min.
  4. Add Lentils, beans, tomatoes, tomato sauce and water and stir.
  5. Add spices and quinoa and stir for 5 minutes.
  6. Turn heat to low-med and simmer for 30-45 min.
  7. Serve with optional toppings: cheese, sour cream, green onion, crackers, fritos, etc.
