  1. Place eggs in a saucepan, bring to a boil. Let sit in hot water for 20 minutes. Shell eggs
  2. Mix dough, knead a few minutes, let rest 30mins in an oiled and covered bowl.
  3. Cook spinach with garlic, onion, salt and pepper. Drain excess liquid. Add chopped hard-boiled eggs cheese and Parmesan cheese. Add breadcrumbs.
  4. Separate dough into desired number of calzones (10 small) 4 meal-sized, ect. Roll out, separate filling and close calzones. poke holes with fork. Bake in hot oven 15-30mins, depending on size. Brush on egg mixture 2x during cooking process.
