  1. Separate the egg placing the yolk in a medium size bowl and the white in a small mixing bowl.
  2. Add the milk, melted butter, sugar
  3. and salt to the yolk mixture and combine.
  4. In a separate bowl sift the flour and baking powder then combine with the wet mixture.
  5. Using a whisk, beat the egg white until stiff and white.
  6. Gently fold the egg white into the batter.
  7. Melt a tablespoon of butter or vegetable oil over medium heat.
  8. Spoon approximately 1/4 cup of batter and allow to cook for approximately 2-3 minutes.
  9. Once bubbles form on the top of the cakes flip and continue to cook for an additional minute.
  10. Serve immediately with warmed maple syrup.
