Salted Caramel Chocolate Chip Cookies

"I had a craving for chocolate chip cookies with caramel chunks. All I had on hand for salt was coarse salt and much to my surprise the result was delicious."

Original recipe yields 36 servings

  1. Preheat oven to 350 degrees.
  2. Gently mix the flour, baking soda and salt in a bowl with a whisk. In a large bowl, beat butter, brown sugar and white sugar with an electric mixer until creamy. Add the eggs one at a time until blended with the butter mixture. Beat in the vanilla. Mix in the flour mixture just until combined. Fold in the chocolate chips.
  3. Divide dough into 36 2 tablespoon-sized balls. Place 3 of the cut up caramel pieces on top of each of the cookie dough balls and press them gently into the dough. Place balls onto a baking sheet.
  4. Bake in the preheated oven for 13 to 15 minutes or until edges are golden brown. Remove from cookie sheets and allow to cool.
