In a Dutch oven or sauce pan, cook bacon until done, but not crisp. Remove to paper towel, retaining 1 Tablespoon of grease.
Cook onion in bacon grease until soft.
Add all other ingredients, bring to boil, then reduce heat.
Simmer uncovered for 1 hour, taste, then add salt, pepper, and brown sugar to taste.
Simmer 2 more hours.
REALLY good if cooked in the smoker underneath ribs or pork shoulder so that the drippings hit the beans. If you do this, you need to stir often, and add water if necessary. Also good if you add some sweet BBQ sauce and/or green pepper to the mix.
