  1. Preheat oven to 350 F degrees.
  2. In a small mixing bowl, combine white flour, whole wheat flour, ground flax seeds, baking powder, baking soda and salt. Set aside.
  3. In a large mixing bowl, combine brown sugar, sugar and cinnamon. Beat in the egg, vanilla, apples and canola oil. Note: You should add more sugar if your apples are not very sweet.
  4. Pour the flour mixture into the wet mixture and stir until evenly moistened. Do not over mix.
  5. Pour mixture into lined muffin tin.
  6. Bake 12-15 minutes or until a toothpick comes out clean.
