  1. 1. Rub chops with the adobo seasoning and set aside for at least 15 minutes.
  2. 2. In a sauce pan combine duck sauce, Worcestershire sauce and cayenne pepper. Heat over medium heat until just hot and then reduce to a low simmer.
  3. 3. Heat olive oil in a skillet over medium high heat. Place the lamb chops in the skillet, and cook for 4 minutes per side or until an internal temperature of a 135 degrees. Remove lamb from skillet and place in the sauce pan with the duck sauce and continue heating for another five minutes. Internal temperature should reach 145 degrees for medium rare.
