"This is actually a combination of recipes from two sources to make something as close as possible to the cheesy bread from Joe Corbi's fundraiser food. You could also use pre-made bread or pizza dough if desired."

  1. Spoon flour into dry measuring cups & level with a knife.
  2. Dissolve sugar & yeast in the 6 tablespoons of warm water.
  3. Stir in 1/4 cup flour into the mixture and let stand 30 minutes or until bubbly. Add 1 3/4 c. flour, 1/2 c. warm water, & salt. Stir until a soft dough forms. Turn dough out onto a lightly floured surface. Knead until smooth & elastic, about 8 minutes. Add the last approx. 1/4 c. flour (more as needed) a little at a time to prevent dough from sticking to hands. Place dough in a large bowl coated with cooking spray. Let rise in a warm place, such as in the oven, for about 1 hour. Punch down; let rest 5 minutes.
  4. Preheat oven to 500'F.
  5. For the topping, combine all ingredients, except the olive oil, into a medium to large bowl. Mix together, gradually adding the oil to make sure the mixture is moist but not soupy.
  6. Cut dough in half and roll out to approximately 11". Place on pizza pans coated with cooking spray or pizza stones. Spread half of the topping mixture evenly over dough. Bake for 8-10 minutes or until cheese is melted and crust is golden brown.


I usually use the 3 cups mozzarella. And it's 16 slices from both pies. I was guessing when I originally posted this.
