  1. Cook chicken, if not using left overs, and cut to bite size pieces.
  2. In Dutch oven, add oil and brown onions and celery on med/low - 10-15 minutes.
  3. Add all ingredients to Dutch oven, bring to boil, then reduce heat and simmer for 60 minutes (uncovered) until veggies are tender.
  4. Salt & pepper to taste while cooking.
  5. Serve alone or over mashed potatoes, rice, or biscuits.
  6. Footnote: Throw in some leftover wild rice and it's even better. Leave out the corn meal and add wide egg noodles to make a hearty chicken noodle soup.
